went on a little unplanned hiatus because windows NUKED my computer and i lost all my data. work protocols or something from my old job kicked in and bitlocked everything, attached to a work account that was no longer accessible

it's aight all the alcohol burns off completely really quick, it helps deglaze the pan w/ the aromatics and reduces into a nice sweet tangy flavor. forms the base of your sauce before you add the tomatoes and cream. but you could probably just substitute w/ chicken stock and achieve similar result
