It is insane to me as a former server that I (and just about every other server) made more than all the cooks, and usually as much or more than the sous chefs.

What you’re referring to as confirmation bias, is actually just years and years of working in restaurants, in many of the most pricy regions, and knowing industry people all over the country.
I’ve pushed 40 or 50 an hour at several. I worked one where I made that in lunch shifts
