If you don't have one already, get yourself an instant read thermometer like a Thermopen. Takes all of the guess work out as to whether it's done. One of my most used kitchen tools

It looks good. Sous vide works well for pork especially if it's a thicker double-cut. Usually go that route for chops. Can get a nice even temp all the way through and just a quick sear the outside to finish it
