Week 6 on GBBO was Pastry Week! For my plaited roll, I made a dim sum pork dumpling inspired roll with a blend of pork, spices, onions, garlic, cabbage, and sesame oil, topped with sesame seeds and served with a soy-sesame dipping sauce.

Week 5 of #GBBO was Chocolate Week! I made a ramen bowl: a dark chocolate cup filled with dark chocolate mousse, topped with a yuzu tuile, royal icing ramen noodles, fondant egg and narutomaki, and white chocolate chopsticks, on a plate of a chocolate mint shortbread biscuit.

Week 4 of GBBO was Back to School Week, which means British flapjacks (sugary oat bars). Mine included honey as the sweetener, with black sesame seeds and orange zest, black tahini buttercream, and candied orange peel. Appropriately, I made these for my students!

Week 3 on GBBO was Bread Week! For my savory monkey bread, half the dough was filled with toasted pine nuts and garlic and coated in Parmesan, and the other half had pickling spices and dill mixed throughout the dough (and coated in more dill and salt).

Week 2 of GBBO was biscuit week, with a signature challenge of slice and bake cookies. I figured I’d unite two hobbies (board gaming and baking) with a pride flag meeple inset in a lemon cardamom cookie with a pistachio buttercream filling.

I’ve made this triple chocolate mousse layer cake many times (it’s one of my favorites), but this is the first time I have tried making a custom 3D printed stencil to add a cocoa powder picture on top. And, surprisingly, it worked!
