The momentum stays up because the students are driving the content in their own direction. You'll have a nice easy time.
Try not to set prescriptive, single path tasks. Allow for more creative flow.
Instead, a task should have a starting point and some creative direction that allows people to play. 
Investigate, explore, have fun. 
The task can then have an end goal, some will get there fast - but then push further. Others won't be direct but play and with a nudge will head towards the goal.
#outreach and #publicengagement: be creative.
If a task has one answer, the students who know how to work it out will, and then have nothing to do, while those who don't, won't, and then have nothing to do.
You'll have to drag the momentum back up. It's going to tire you out as a presenter!
This time last year...30 kids, one lost sombrero, some sneaky clues in an antiquities cabinet, eggs and lots of tasks. All to celebrate the brilliant work done by @alexhorne.bsky.social in his support of @schooltasking.bsky.social

I raved about this years ago on the "before Bluesky" platform but you should start demo design with the box that it's going to go in and where it will be stored. If you can't store it safely and find it easily - the demo might as well already be broken. Think about the long term.
Don't do public engagement work for nothing.
Yes, it is fun. But it should be delivering something for you personally as well as for the audience and your company. How can you get visibility for the work you're doing? Photography? Websites? Social media? Press interest? Intranet/bulletins?
Nothing should be used once and forgotten.
Think about what other events or expositions you are doing and how you can use any content for both. Adults and children both like playing with toys while you talk.
Find something everyone enjoys talking about.
The best thing to do is chat about the topic until you all realise you're grinning and laughing - there's the central element of any public engagement resources you design!
It's easiest to find this with someone who is not an expert in the field.
This morning I was working with a company on how they can do #PublicEngagement work and heard the all-time classic "but our stuff isn't interesting".
