True but there are objectively good ways to prototype. Otherwise expect to throw everything away and start from scratch when you're ready to move onto making it good!

I've shown Mirror's Edge to my 3 year old son today and I realized the game is close to 17 years old.

I would keep at it, but do less. Progress is progress. Reserve a specific time of your week to work on the project. Try and do small but measurable changes. Maybe tackle stuff that you feel is cool.

Unity's canvas scaler is strong but there is still so much adjustments needed to layout elements.
But it looks way tighter than before!

Tonight I am biting the bullet and finally making sure our UI supports 4:3, 16:9 and 16:10 at least.
It's a pain. But I believe once we're all set, it'll be worth it.
