My take on the Filipino fruit salad for the restaurant I work at. "Sa Buena" Tartelette. Gluten free Sablée with cranberry jam, pastry cream and spiced fresh apples. Topped with coconut cream chantilly and flavoured almond tuiles(pandan and mango).
