Last Super Moon of 2025 making people crazy

Looks good! Yeah I’m used to flax being a replacement for eggs in cooking so it makes sense that they get goopy. Problem is you have to soak them prior or they will suck up all the water in your dough. And that’s a fine balance.

9g salt, 365g water, 60g soaked flax seeds. Dough is supposed to be sticky. I just wasn’t prepared for how sticky which prevented me from stretching prior to bulk rise so it doesn’t have the lift. turned out just fine though. Will stretch it next time.

Rye is much easier. I think the flax seeds needing to be soaked prior to adding into the dough was what made it so sticky?
180g Spelt to 150g bread and 150g all purpose were my ratios.

This weeks bread is Spelt with golden flax seeds. This was a very sticky dough.

Agree. You have to give a shit about people so they want to work for you. Ask them how they are doing and listen. Treat them like adults until proven otherwise. Still have expectations and boundaries. Would surprise you how much they will respect and work hard for you when you care.

Yeah. You will probably use it more than you think. Even for pizza dough. I have a few attachments. I think my favorite is the pasta attachment for fettuccine and linguine also the sauce attachment for my tomatoes. I personally don’t do meat, but I have a friend that loves the meat attachment.
