Fermentation breaks down the inulin which causes gas. They have a lovely 'dry' sharp tartness when fermented. Highly recommend

I'm a chef, and i like to cater private events. For last nights first course we served these Matane shrimp Guedilles on brioched Pampushy with celeriac remoulade, fennel kraut and 1yo lacto pickle. They go down easy.
