Pay super close attention to the ratios of cheese. I made Tini's mac and cheese and I melted too much of the cheese into the sauce and it made it kind of grainy. Also shred the cheese yourself, it's a must. The pre shredded stuff has preservatives that mess up the chemistry of the sauce
