yeah, so the farmer receives a cash settlement of the contract or option, right? thats the point of either buying/selling them, depending on ones view of the price of the underlying.

options, both put and call options, can be purchased and sold (written). the farmer would buy or sell an option, depending on where they thought prices for the underlying would go. both types of options maintain a market value and change as the market value of the underlying crop changes.
