They teach methods, which isn't unimportant to mathematics, but that's often what people boil down math to.

To be fair, the mathematics taught through high school is VERY different than what mathematicians do for careers.
Even then, a lot of STEM majors don't interact with proof-based mathematics. (Maybe CompSci?)
Even then, I didn't learn any graph theory until doing it for my capstone research.
