Pecan season!
The biggest harvest ever for me, around 80-100 lbs. I soak the nuts in filtered water w/ sea salt, this removes the enzyme inhibitors, enhancing digestion, increasing nutrition, and being dehydrated at 105 d. keeps them raw. BTW, walnuts lose ALL bitterness when soaked.

Pecan season
Here is the 2nd batch of pecans processed. The box weighed 18 lbs. After cleaning, soaking in filtered water w/sea salt, and then dehydrating for almost a day, I have 6.4 lbs ready to consume. Soaking removes enzyme inhibitors. Drying at 105 d. keeps them raw.
3 or 4 boxes left to go..

And.......this haiku remembers seeing Carmen in a play called 'Wit'...she's an actress

In 'Wit', you brought tears
as well as laughter, I came
undone in that sea

The Pingualuit Crater in northern Quebecβ€”a geological marvel created by a meteor impact 1.4 million years ago. It has a diameter of 2.14 miles and houses Lake Pingualuk, is 876 feet deep. This lake has some of the purest water on Earth, it relies solely on rain and snow.

All of my peppers are finishing up late as well. What do you like doing with your harvest? I often dehydrate, save for two years then grind to make my pepper powder. Also like to save in freezer for pepper jam.

Utrecht, the Netherlands
It is being viewed as the
!! **correction of a historic mistake.**!!
More than 40 years after parts of the canal that encircled Utrecht’s old town were concreted over to accommodate a 12-lane motorway, the Dutch city celebrates restoration of its 900-year-old moat.
