In my annual tradition, this meal includes a recipe I picked up at the SLC Festiva Italiana. Namely, the white beans with ricotta. This came together so well, I might make it again in different forms. Also, yes, I was actively drunk while doing meal prep.

Baked citrus flavoured chicken with green peas, Brussels Sprouts, and white beans with ricotta cheese. Served with beer to drink.

While I started doing dishes as I cooked, I still had a good amount to finish up after eating.

This recipe for mashed potatoes is different from the one I used last week. While the taste is similar, this recipe yields more mashed potatoes. Also, I was able to use the heavy cream I’ve had for a few weeks.

I’m systematically using the bulk meat I bought a handful of months ago, hence why I used pork chops for meal prep this week.
