There's a second lattice applied to each eyeball to keep them the shape I want so they can be non-spherical, in addition to the one used for animation

I'm not sure what method you're referring to, but I don't do anything fancy with UVs. It's a normal eye rig but with a big lattice around each eye/eyelid area so I can shape and squash/stretch them
