First time smoking a pot of robust chili.
Low and slow 5 hours with apple and hickory.
Brisket Bark and a touch of Bully along with chili, paprika and cumin.
The smells and flavor profile is fabulous.

I will try that on the comp trimmed brisket in the freezer, waiting for the cool weather…brisket is best smoked in cooler weather. I have no proof, but think its a quantum level thing.
