I had a wonderful meal in a Sicilian restaurant on Sunday. Chicken breasts slow cooked in a thick marsala sauce with sliced pears. Dreamy, very rich. Was thinking it could work with something like tofu as well, maybe flash fry it and add after the sauce has thickened?

Tofu is lovely, if used with care. I like it cubed (about 1.5cm) and quick-fried crisp on the outside, with rice noodles, chillies, and a shitload of shiitake. And I'm not even a vegetarian.

I had a wonderful Italian lunch experience today, Chicken breast braised long and slow with marsala, red onion and sliced pears. It was truly outstanding, sweet, and very rich. Apparently a traditional Sicilian winter dish. A new one on my 'favourites' list. Yum. Reckon it's quite easy, too.
