on lex's first business trip to america he thought it was oatmeal and ladled up a bowl of it from the breakfast buffet to just eat. not good!

labelling something gluten free also means you don't have to worry about cross contamination. like, if your deli ham slicing zone also sliced deli meats with gluten filler [various meat loafs, bologna], you could get gluten in the ham. a certification on the label means that cant happen.
