I had a friend who was allergic to gluten.

We've made cookies with potato starch and tapioca flour. Rice flour substitute for dough buns or wonton wraps. Corn flour (masa) for tortillas, enchiladas, muffins. And there are gluten free oats and flour for bread and things so you can still enjoy bread
