You read this, along with the recent Epstein emails and the names associated, and the running theme of Trump's administration becomes clear: exploitation—of children/minors, of immigrants, of the working class, of our economy, of the law, of our environment, etc. Essentially, we're rich so fuck you.

Q-Anon/Deep State—whatever conspiracy gets traction shields the obvious, and somewhat banal, reality that the huge money running this country gives not a single (now discontinued) cent's worth of concern about those they control from their gilded panopticon. It's gonna be a big list.

They're great at what they do—mostly steaks and seafood in an amazing setting.

I never worked at a high-end place, but the little Italian restaurant on Longboat Key liked to imagine they were—wearing black vests and slacks while serving what amounted to expensive Olive Garden food to an older clientele. Also, Chart House for a few weeks.

I did a very small amount of bartending at a little restaurant in Florida, but never worked in a bar—that was my brother and sister at a packed Blues bar in Dallas.

Man, that is nightmare fuel. It reminds me of a restaurant at Lake Travis in Austin that had a whole bunch of outdoor patios at different levels connected by various lengths of stairs. Didn't work there, but got sympathetic angst eating there:

I ate like a king when I was cooking. We hand cut the steaks, so I'd take the strip and ribeye scraps and chop them up for a burger, sneak pieces of king crab from the steam tray, cut a wedge of prime rib to "test"—definite perk of the job.

I remember dishwashing well—hands so waterlogged they become even more sensitive to heat as you're ramming rack after rack through the Hobart and pulling plates off at close to 200 degrees. But everything stops if you run out plates or silverware or glassware or pots...

I both cooked and waited over the many years, so my nightmares tend to fall into either plating up a ten-top and realizing I forgot to throw on a steak or being sat with a ten-top in an already full section.

That stresses me out just imagining the possibilities. Outside of dropping a fully loaded tray, one of my more persistent fears was breaking a cork and leaving half of it in the bottle.

The tension/release after an insanely busy shift is part of what made the work bearable during my younger years. "Waiting" is the most realistic movie rendition of the environment I've seen.
