Tonightâs episode: 2-3 stage forced mustard patina for an Opinel No.8 carbon
(Cinnamon, cayenne, brown sugar, sugar, #16 mesh black pep)
are my favs. Sometime I mix a couple strips up for R&D, im getting somewhere with the fine coffee groundsâŚ
(gentle fine dusting of coffee sprinkles, finish with sugar or a pep, you dont want full-on coffee-bacon, merely inspired notes.)
Try it out!
It may take a few tries with different added flavors to find your favs, sometimes a I cook a variety flight of bacon strips.
This is where it gets fun added spices!
Winners ive tried when drizzling over the cold bacon before it goes in the cold oven:
â˘cayenne
â˘sugar (50% of the times, I add it halfway through)
â˘cinnamon
â˘fine coffee grounds
â˘wagyu tallow
â˘MSG
â˘#16 mesh exXxtra course ground black pep

Sure! its only cold when you put the bacon in.
Bacon in a foil pan
Foil pan into cold oven
Set oven to 400°
Set timer for 15 minutes, check bacon every other minute until desired doneness is reached (usually around 15-18minutes)
