Definitely rushed it a bit with the rise because we wanted a loaf plto eat with some soup for supper but the flavour is great even if it's a little bit dense.

The soup is pinto beans with chipotle peppers in adobo, with cilantro, scallions and lime.

A large rectangle-ish mass of autolysed dough is pressed onto the counter next to a jar of lavain preferment and some salt to be added to the dough. In the back corner of the picture is my bread journal which is a small red-covered spiral-bound notebook
