冬天给它的根部盖厚一点mulch。枇杷树挺皮实的，我这有意大利人弄个阳光房里种棵枇杷树的。冬天阳光房并没有取暖设施，树也活了几十年了的样子，还结果。

很多人这两天在批判竹架的安全性，我看分析说，这与着火、大火快速蔓延没有关系的，事故原因是用了易燃的防护网和外墙材料。以前在香港窄小的人行道行走，头顶上的竹架并不令人不安，也没有泥浆掉落。
香港郊野的高龄树木都编排号码，每个路灯柱都有编号，老旧建筑的使用寿命和维护程度比大陆及其它地区高了不知多少。人口如此密集、空间如此逼仄的香港，运转的井然、安全的秩序，管理难度和精度是超高的。如果全盘交由大陆官僚体系来管理，结果将是灾难性的。
没错，香港是在衰落，但还远未到人人皆可嫌弃的地步。

我用100%黑巧不加糖只加用苹果酒泡过的蔓越莓干做sourdough。我隔水加热融化了黑巧后加奶跟面粉和到一起。没想到黑巧油脂太高且吸水，面团按原含水量，又硬又不起筋。特别是黑巧凉了以后，油脂更硬，我改用高温30度发酵，之后也不敢再放冰箱慢发（怕油脂凝固）。但后来的出品却惊艳到我，高可可油脂的面包，保水好，质地柔软到可以下腰的地步，而且香极了。我再次做，改进了过程：先和面团，加入starter醒发后再加入融化的黑巧。虽然费劲，但还是让黑巧和面团完美结合了。这样做出的sourdough,气孔均匀，表皮酥薄似点心，内部柔软细腻仿佛布朗尼，只是蔓越莓干分布不均，多数沉底。不过已经很好吃很好吃了。
