Duck gravy

Everything but the gravy on one plate. Roasted duck breast, celeriac puree, figgy stuffing, roasted potatoes & peas and chanterelles

Raw whole chicken glazed with olive oil (poêle) with lemons, green olives and lemon slices. It was roasted and very yummy. Sauce makes itself.

Roasted duck with dried apricot, prune & fresh fig stuffing. The fruit were steeped overnight in herb tea with chamomile, fennel and other things I don't know. Bought it at Etaly in Pollens/Bra Italy

Floury potatoes roasted in duck fat. Crackling from the neck skin.

Green peas & chanterelles sautéed in butter

Some recent meals. Poêeled chicken with lemon olives and fig and roasted young duckling stuffed with tea scented dried apricots, prunes & fresh figs with celeriac puree, potatoes roasted in duck fat and Sautéed chanterelles & peas. Fig and chanterelle season!!! Yay.

Might need to try this, to I'll have to figure out black cod in German and wait till Dec as that is cod season here. In Norway cod season brought cod liver. I didn't buy it, but would now that I've tried it. Really foie gras of the sea.

Yes less meat not, necessarily no meat and by "meat" it is generally beef, pork, & lamb (tho Americans eat very little lamb compared to beef, pork & chicken. Some turkey, but turkey's but overall American eat chicken the most. Beef is a treat!

Nature and the environment permeate the language viscerally. Irish predates English by a millennium. Its early writing system, Ogham, written vertically as a series of lines and strokes, has an alphabet based on trees.​ The Irish language is a joy.

The National Council for the NEH had 26 scholars and leaders serving humanities efforts across the U.S. After today’s White House firings, it’s down to just 4 Trump-appointed White men, one terminated member told me.

ICE agents raid South Shore apartments; Trump says Chicago could become military training ground ICE agents raided a South Shore apartment building overnight as the city braces for a possible military deployment.

It can’t happen here, you say. But it is happening.

I'm sure that is part of it, but I also think China isn't a wine culture, so the up tick could have been a fad/show of wealth. The decline also coincides with a crack down on the wealthy and admonitions on shows of wealth. Domestic production has shift to quality vs quantity which is a global trend.
