I think maybe the meaning appears unintuitive because it looks like it should be parsed as 'non- plussed' but the origin is the noun 'a nonplus' meaning something like 'a blocked state' and to be nonplussed is just to be put into that state i.e. to have one's thoughts blocked (in confusion)
