不粘锅吗?别干烧太长时间就行.不粘锅一般超过两百度(具体应该是两百多度,但是我没记住,所以差不多不超过两百度肯定没问题)就会坏.我一般是烧一会儿拿手在锅上面感受一下,差不多有那个感觉了就是锅热了.不过这个方式很不客观,你也可以拿个红外温度计,达到180度的时候倒油.
