I mean… the Constitution specifically says POTUS can only hire people with the consent of the Senate or (for inferior officers) as provided by law. So why is it crazy that for a few specific jobs, his ability to fire people is also constrained?

Yes, exactly. The powers *granted by the Constitution* are granted to the POTUS directly, but there are plenty of theoretical “executive powers” the Constitution doesn’t grant, or grants only with Congressional buy-in (like appointment).

The part of “unitary executive” that makes sense to (non-lawyer) me is: The powers *granted by the Constitution to the executive branch* are granted directly to the President, who delegates them to inferior officers.

But that doesn’t give POTUS any powers the Constitution didn’t grant.

If there’s one thing that’s clear from the Constitution, it’s “a two thirds majority of both houses of Congress can kick the hell out of the other branches”. They could fire the President and anyone in an executive department they didn’t like, so why not turn the department into a commission?
