Short rib dish from yesterday. Chipotle braised short ribs, quinoa, bean veloute, peas, and caramelized onions. Didn't mean for it to be dichromatic but it works!

Setting up a shortrib braised with chipotle, beef stock, tomato paste, garlic (lots) and some other stuff. Gonna work on plating it with quinoa and maybe some green drizzle or swashes of a kind.
