In a very real way that's why Watson exists. Not because he just does, but because that POV- constantly adjacent to the detective but not in possession of everything the detective has deduced- is essential to you the reader having fun too and doing a little deducing of your own.

For that to work, you can't know what Sherlock "knows." His actions need to be perplexing to you the reader on occasion- you're having fun reading Amazing Detective Take Leaps Of Astonishing Logic. For that to happen, Sherlock's POV doesn't work. You need someone else, there the whole time. Watson!
