I wish I could interview Nakano and Koizumi.
it was a piece that was specifically not OKd by Koizumi, who had designed the model and had given Nakano this specific model to start adapting into 2d. You can see Nakano discuss this in the Zelda Art Masterclass. The bust and black and white image in the top post are the first to be given the OK.

Yeah I.. I probably need to start looking at a bunch of different merch now. I bought the amiibo in 2016 so regardless of what box I had gotten, I wasn't archiving any of this and likely wouldn't have paid it much mind. That means there's gotta be a lot more that I missed, ugh.

None of these originate from full scans of prints, so all of the leg and tunic changes are deliberate. Seems pretty obvious that this piece did not exist in this state originally, even as an alternate.

We can see an unknown variation of Link's illustration with the ocarina of time where he's drawn entirely and with open eyes (that's completely the base for OoT Link's amiibo).
