I'll have to watch him and think more critically. I had thought he was a reliable Left-of-Center voice.

I would say that he MAY be myopic on this point but he's generally thoughtful. Given time to work this out, I think he may change his tune. That said, the media landscape in the U.S. is (I think) fractured and disparate enough today that I can see where he's coming from.

There is an element to clear broth where you skim off any scum from cooking meat. THAT has an impact of flavor and texture/viscosity. But not hydrating/cooking the noodles in the broth because it releases starch feels odd to me. That SEEMS like a GOOD thing to me based on Italian pasta cookery.

...I do like to know whether or not there is ALSO a practical implication involved. If I'm going to try making something, I might not do everything the traditional way but if that is ALSO in service of flavor and texture, then it makes a difference to me.

That's fair. I guess in my mind, there's a balance of flavor, food science, and tradition. And a lot of traditions seem to have developed in service of flavor/technique. If a chef is doing something counter to tradition for a reason, I appreciate the deviation from tradition being called out but...

ONLY thing I question is the need for broths to be extremely clear. I understand that some steps to clarify broth also improves flavor and texture. But Nick DiGiovanni cooked some noodles in broth rather than separately in water, which released starch and made it a bit cloudy. Why is that BAD tho?

I feel like some folks are sad over SMILING FRIENDS ending apparently prematurely. I've never seen it but I have a hard time feeling bad over a series that cameo'ed/platformed Nostalgia Critic Doug Walker. I LOVED TGWTG back in the day and him/his management fucking the site pissed me off.

As a VERY white and extremely NOT-ASIAN person, I find watching Uncle Roger videos where he reviews other VERY white and extremely NOT-ASIAN chefs attempting to make Malaysian, Thai, Chinese, Filipino, and Vietnamese dishes VERY interesting and informative.

I don’t think people understand what’s this means: MEDICARE AND MEDICAID ARE BLOCKING ALL WHEELCHAIRS, WALKERS, CANES, INSULIN PUMPS, GLUCOSE MONITORS, CPAP MACHINES, NEBULIZERS, BEDS, CRUTCHES, COMODE CHAIRS, BED SORE PRESSURE PADS, CHAIR LIFTS, OXYGEN TANKS, BREATHING EQUIPMENT, to name a few.

Oddly, I'd almost fault Brennan Lee Mulligan for being TOO prepared. In the past, the table questioning the setting, backstory, and their own character mechanics helped the viewer come to grips with things. Everyone hitting the ground running made it even harder to grasp exactly what was going on.

Meanwhile, Campaign 4 starts essentially in medias res with an event of monumental import and past events, figures, locations, and social strata are referenced with very little context or preparation. There's just a bit of a lack of foreplay that means the activities hit a bit dry and rough.

I keep trying to grapple with why @criticalrole.bsky.social Campaign 4 hasn't hit for me like the others. It MIGHT be that previously, campaigns didn't shoot for import and gravitas from the jump. Like (I assume) many home-games, they started fun and fuck-around and the depth built over time.
