Watch out for Sulfites and other preservatives, but even with sulfites you can often over power it with extra yeast and a little extra care.

It turned out amazingly well!

I've actually done one with freshly dressed juice from a orchard and another with store bought juice (that I added a bottle of apple brandy to and a couple of cinnamon stick and a vanilla bean too)

Awesome!!!! Mead is so good; you just need to be patient and leave it along for a bit. After the first fermentation is done you're going to want to get an autosiphon to transfer it to another 1 gallon carboy and let it age for several months. Mead definitely needs it unlike most beers.

Sorry for taking so long to reply! 2.5 pounds to 1 gallon of water would get you a dry to semi sweet mead with champagne yeast. Usually, it's enough to make 5 bottles or so dependant on how much sediment there is. I can give a full write-up when i get home later today!
