For things like poached or fried eggs, I always break them into bowls first, so that I don’t start rushing. Breaking them straight into pans is when I find I break the yolks most!

More helpfully, try making the crack in the egg with a knife rather than, e.g., the side of a bowl. You want to apply as little pressure as you can.l to make the crack and get through the membrane, then pull the two halves apart?
