Seconding this. Most varietals work great just cutting the top off and pulling the seeds and pith out.

Homemade brine is 1 cup vinegar to 1 cup water, 2 or 3 tablespoons of salt per cup, sugar and spices to taste. Boil 90 seconds before jarring 2+ weeks. Can reboil and reuse.
