An Aluminium lined sheet pan with 15 sliced in half Roma tomatoes, brushed with olive oil and sprinkled w/ salt and a pinch of sugar about to go into the oven.
A Mason jar filled with garlic, slow roasted tomatoes and honey. This will ferment for the next few weeks to make a delicious living condiment!
#tomatoday25 Slow roasted a couple of lbs of Romas; honey garlic tomato sauce fermenting; 10 lbs of Romas in slow cooker making Italian sauce. Still have 12 lbs of Romas to process - probably going to try a small batch of roasted tomato sauce and then the rest straight up stewed tomatoes.
