Alas, I don't like the mouth feel of silken tofu. So I'll always sub in firm tofu for cooking and soft tofu for eating cold.
Turned out pretty well enough to consider making it again but I really hope to source some fermented black beans for next time.
Made my own mabodofu sauce:
Chicken broth, about two empty furikake jars' worth
Half a can of refried black beans
Some red miso
Some hoisin sauce
Some sesame oil
Fresh ground black pepper (not Sichuan)
Corn starch for thickener
4oz ground beef
Too much sriracha
A brick of tofu, not silken.
