my recipe's pretty adhoc but basically:
Roast capsicum, full garlic cloves, red onion and zuchini at 180 for 20mins, with olive oil and tuscan seasoning. Then add cherry tomatos, halloumi, mushrooms with more seasoning and bake for another 15 or so :) but you can kinda huck any veges in really ☺️
