Spaghetti with baked zucchini and salad to get out of an eating out slump. I think next time I'll cut the squash lengthwise for time and use breadcrumbs over panko 🍽️

Minced mushroom, tofu and chicken served with sauteed squash and zucchini with some (semi) blistered green beans and topped with spicy mayo and sesame. On the side is a cabbage and parsley salad with lemon and oil

Mac and grilled cheese sandwich with salami and diced pork sausage (def an indulgence kinda dinner : >)

Stir fry with zucchini, yellow squash, red cabbage, minced and fried shallot and garlic (getting better at not burning them), diced tofu, sliced mushroom and celery with some sesame and chili crisp on top

Some dinners from the past week or so, trying to focus on more veggies (sometimes) and keeping waste low by using up leftovers and stuff 🍽️

Also if you want a good rec for food essays, I really liked the kitchen as a laboratory. The chapter on how we see our food affecting our expectations changed how I do things like plating

Haven't started anything recently, but I've been considering getting fat salt heat acid, and I'm always looking around for stuff about the brain or genetics

Minestrone bubbling on the stove. Made with celery, carrot, (didn't have onion), sweet potato, canned and cherry tomato (added at different times), yellow squash, northern beans, whole wheat elbows, and kale in a vegetable broth base

Sister's on a special diet for the month, so I've been on top of finding good veggie dishes
Last night was minestrone with as many veggies as I could pack 🍽️

Caldo is a guarantee this time of year with my family
Usually it's whatever vegetables we've got on hand in big chunks, but regulars are cabbage, potato, chayote, carrots, and the occasional onion or tomato, plus stew cuts of beef
It always ends up a huge pot, so it's also enough to share =v=

Tiramisu for Christmas dinner with the family. I was hoping to get a pic of the slice, but it came out a bit rough
