Breakfast this morning - I fancied a treat and we have so many raspberries just now.

Homemade waffles including our duck eggs, fresh homegrown raspberries and ๐Ÿ maple syrup. Yum.

Served with some organic rye sourdough to mop up the juices, it includes tomatoes, onions, garlic, garlic scapes, cumin, smoked paprika, chilli, kale, thyme, oregano, parsley broad beans, sweet potato, olive oil, sea salt and black pepper.

Whilst influenced by shakshuka, this is not an authentic recipe ๐Ÿณ I included fridge leftovers into the mix, herbs from the garden & a kale picked this morning.

๐Ÿ…I used tinned cherry tomatoes. Mine are not ripe yet ๐ŸฅซLater in the summer I freeze bags of cherry tomatoes, which are ideal for this dish.

Having realised that the pixies do not come at night to do the housework, and with a long list of writing and editing work to do today as well as the chores, I decided to make a hearty breakfast.

The step over apple trees are blossoming. These trees are trained so that the grow low enough to step over, making them ideal for small spaces, or the edges of veg beds. They produce flowers for pollinators, fruit for us, and donโ€™t shade out the other plants growing in the bed.
