There are so many pour over possibilities out there. Some deliver more consistency than others. I personally use V60 and Kalita Wave (modified). With Kalita I get much better results than with V60.

I agree with that.

I also feel that 99% of the people that start a coffee shop lack a lot of knowledge. How to properly dial in a coffee, the water...all the variables that impact a cup of coffee... If you don't know why your coffee is not tasting on point, how can you deliver consistency.

You mean that, because they offer more or less the same quality across different shops?

Are you referring to the whole experience or only to the consistency of the coffee they offer?

It has been a long time since I had this 120h fermented El salvador coffee by Friedhats. It's not tasting as good as it already was, but still a great coffee. You have to be careful to not over extract otherwise it becomes very intense and not so pleasant. #specialtycoffee

We are seeing much better decafs on the market taste wise. I recently super tasty decafs from Manhattan Coffee Roasters and from Suedseite Coffee Roasters.

I have had beans from both. And once, I've even participated in a "cupping" organized by Scott Rao here in Europe. I enjoyed all the coffees I've tried.

I only tried Sey once and I really liked the coffee.

It'll always depend on your personal preferences. Origin, varietal, processing...

I am super flashed by co-fermented.

The one thing I don't know is, if a bad harvest, by simply being processed as co-fermented, can deliver a good/high score coffee. The implications of this for the farmers and industry in general could be huge.

Does anyone have more info on this?
