I was lucky enough to be able to see him do these tracks live when he toured back in 2016, shortly after both Bowie and Jorge's father had passed away. He's recorded himself doing them again to mark 10 years since; still solid.

Or, if sweet is more your thing, you could turn some of it into a caramel sauce. Red wine caramel on some poached spiced pears is pretty tasty.

My immediate go-to would be to use it in a red sauce. Cook up some aromatics, some meat if that's your thing, deglaze with the wine, reduce it a bunch, then add crushed tomatoes and whatever herbs float your boat.
