chickpea mash is a great, cheap, meatless option (like chicken salad but with chickpeas, and you can mash to a texture you like). My other two favorite easy meatless meals are just pasta with LOTS of roasted veggies or seasonal sheet pan veggies with tofu (I’m making that tonight)
