Chicken with thyme and porcini mushrooms, and a drizzle of truffle oil. I’ve had the dried porcinis soaking in a mixture of wine and water all day to make the fantastic stock 😋

🥹 This Rex. He’s from the farm half a mile away. He comes up to see us almost every day. We gave him a good love up this morning and he left. 5 minutes later he’d been home and brought back a toy for us to throw for him. Is that the cutest thing ever? 🥰

Ireland is a great country full of wonderful people. We moved to Donegal from Yorkshire 4 years ago. Best thing we ever did. I’ve been all over the world but I’ve never experienced such friendliness as I have in Donegal.
