Once they get to TIPA % they get too strong for me (10%). A good DIPA you shouldn’t be able to tell it’s 8%.

You can tell a good thickness because if you tilt the glass the carbonation chases the head.
Carbonation is also important. It should be lacking in stouts and ales.

Well that’s all down to preferences and the style. I personally prefer Stouts & Porters, DIPAs and traditional English ale. In all of those I expect a medium-thick body, a good head retention, a blending of flavours so not one dominates and particular hops for the style.

But brewer skill is essential. Some brewers just simply aren’t as good as others even if they used the exact same ingredients.
Supermarket beers aren’t as good because there is less ingredients & less quantity ingredients.

American & NZ hops are very different to traditional British hops so you get very different beers. Now you also get Cryo hops which are more intense. Some add oats for thickness and creaminess…it’s a lot more complicated. Vault City in 🏴󠁧󠁒󠁳󠁣󠁴󠁿 are experts in craft beers with different flavours…..

It’s a combination of the malts & hops used + abv and brewer skill/equipment. Many craft breweries will also add flavours too. It’s incredibly skilful.
Traditional breweries near me that make fantastic beers are Harvey’s and Fullers eg Armada Ale and Golden Pride which stick to old recipes…..

So I was in New York 11 years ago before I got my Untapped account. I remember trying a few Brooklyn beers. The only one I’ve had since then is their Black Chocolate Stout. I’ve heard of Finback but not those other two. I’ve not had any Finback beers. Which are their best ones?

Loved New York the time I visited it! Manhattan not Brooklyn but next time…
Supermarket beers are cheaper as they usually have a fixed price ceiling so the breweries that want to sell in them have to use cheaper ingredients usually.
I tend to avoid them and buy direct from breweries instead.
