Hm. You might be on to something. These sauces, I find, are incompatible with my palate. I've really tried to enjoy them, but these flavors I've found are too... different! They don't "hit right". 😞 But maybe these sauces are naturally limit what foods you can actually put them on? 🤔

There is a great deal of privilege, being Mexican-American, of living in the Netherlands (or rather, moving there)-- especially being there during June, while people I knew protested in LA. It weighs heavily, constantly.

So, I curiously looked up a few Mexican restaurants in the Netherlands.

What I learned: they claim authenticity but then will put pickles, corn, frittesaus, mushrooms, aubergines in the food.

Con: having to make every good food you've ever known from scratch and having to bring spices from USA because they're more expensive and arent easily accessible in the city where your partner lives in NL. (😭)
