aren't those like food truck operations? I want a 16yo kid with a puppy and a sheet pan over a Coleman stove. I was taught to go for the $2 grilled cheese because it's better bread and they have garlic/herbs and sometimes a slice of tomato. Also much shorter lines than the $1 guys

I've seen it both ways, but when you buy for a specific (touring) act they'll sometimes let you pick a seat (and charge you more for that privilege). When I first went to a show outside LA I was shocked you could pick a seat, but I've seen it a few times

people being seated (especially in the front) is distracting at a comedy show, but there is probably an MC doing a disposable 5+ minutes so 30 minutes early is pretty extreme
