Find something to volunteer for - even if its doing very basic things. I spend mine on online charity events.
Take the time off to go vote if your job gives it - I might only get 4 hours, but I spend that 4 filling out my mail in ballot!

And even if you get paid for some # of hours left-over, there are OTHER categories of leave that you need to use or the whole thing was pointless. I get 3 "personal" days that go poof on Jan1st if I dont mark them.
