Mainly because they're public domain. But you only hear "Like the Wind" and "From the East" in Gran Turismo. I'd have much rather they do what older games had done and iterate on the compositions of those pieces using the quality they can produce presently.

I'm navigating menus to jaunty jazz versions of "Greensleeves" and "When the Saints Go Marching In" it doesn't have the sense of identity that original pieces from previous games had. Call it rose-tinted glasses if you like, but I can hear "Greensleeves" and "Saints" in other places (cont'd)

Playing the "My First Gran Turismo" demo, I developed what might be a very controversial opinion about the games music. While the sound quality is beautifully crisp and there's some clear talent being put to work, the compositions they're playing are absolutely mid and forgettable.
