Agreed, that's a "once and never again" flavor experience.

What others said.... it's so it lasts longer before going rancid. If you'll eat it in a short span of time, leave it out; I usually do. But if it's going to be a month or two before you get back to it, that needs to be in the fridge. Air/heat/light are what make it go rancid, so avoid those.
