this is what romans call a maritozzo. it is a sweet bun, brioche i think, filled with cream and dusted with icing sugar. fortitude bakery in london calls them beignets, badger @mrfhbear.bsky.social.

Sourdough Maritozzo
The first Saturday in December in Rome is Maritozzo Day- a day dedicated just to these Italian sweet buns!
My sourdough version uses a buttery sourdough brioche dough with a hint of orange zest and filled with a luscious vanilla whipped cream. Dust with powdered sugar before serving.
Un pâtisserie typiquement romaine (un maritozzo = une brioche avec raisins secs qui est ouverte et remplie de crème fouettée) et un thé vert matcha glacé.
Petit-déjeuner en terrasse d’un café après avoir été chez le coiffeur à Rome. Je m’italianise de plus en plus moi.
